They are a late season apple; they'll probably be in the markets in another week or so until mid October.
Another late season apple that I used to really like is Wolf River
which is kind of uncommon these days, at least commercially. My
neighbour where I grew up had a row of them along their driveway
leading to their farmhouse. The apples are red with yellow
streaking, quite sweet and amazingly large. Each single fruit is
over a pound. They're a good cooking apple that keeps it shape.
One reason they're not popular anymore is that most people can't eat
a whole one in a single sitting and the fruit is so heavy that tree branches are prone to breakage in a wind.

Same on our side of the lake. Ontario is Canada's largest producer
of apples and B.C. second. For similar climate reasons New York,
Michigan and Washington are also big producers.
This recipe is not for you, but you could use perry and pear slices instead. Zubrowka is buffalo grass (that's sweet grass) infused
vodka.
