    FOR ARIZONA BASEBALL FANS, A STADIUM BRATWURST MEANT TO 'BLOW THEIR MIND'

    For Arizona Diamondbacks fans who like to stick to the basics at home
    games, peanuts, popcorn, and Cracker Jack remain obvious options. But
    for those whose game-day taste borders on outrageous, Stephen Tilder,
    executive chef at Chase Field in Phoenix, has some options.

    You can get 18" bratwursts adorned with everything from tater tots to
    fried eggs.

    Chase Field is among the stadiums nationwide that now tout menus
    brimming with outrageous edible novelties.

    "We are always trying to create, basically, restaurant quality food in a ballpark," Tilder says. "When people come in we want to blow their
    mind."

    In March, Tilder - in collaboration with a Sports Illustrated reporter
    -- created three new gigantic dogs for Diamondbacks' fans. One of those,
    the SI Cover Dog (named after the magazine) is topped with jalapeƱo &
    apple coleslaw, barbecue aioli, fried mac & cheese, house cured beer
    pickles and green onion. It's all served between an onion bun.

    Title: Bratwurst In Beer
    Categories: Sausage, Beer, Vegetables, Breads
    Yield: 10 Servings

    10 Fresh bratwurst sausages;
    - about 2 1/2 lbs
    2 lg Onions; thin sliced
    2 lg Bell peppers; in strips
    1 c Butter
    6 (12 oz ea) bottles beer
    1 1/2 ts Ground black pepper
    10 Hoagie rolls
    Boetje's or Raye's mustard

    Prick bratwurst with fork to prevent them from exploding
    as they cook. Place in a large stock pot with the onions,
    peppers, butter, and beer. Place pot over medium heat, and
    simmer for 15 to 20 minutes.

    Strain vegetables from the beer, skim some of the butter
    off of the liquid and put all in a saute pan to brown a
    bit before using as a condiment on the sandwiches.

    Preheat grill for medium-high heat.

    Lightly oil grate. Cook bratwurst on preheated grill for
    10 to 14 minutes, turning occasionally to brown evenly.

    Serve hot off the grill with onions and peppers and
    stone-ground mustard on hoagie rolls. Off additional
    beers to accompany the sandwiches.

    I suspect I'll be long gone before they start playing there. IIRC the last game we watched last year, spring training, was in late March. Some of the teams were already bailing out to head home for the season opener.

    I have to be back in Alaska no later than April 8 to meet my PFD requirements.
    Since I plan on buying another used car, and drive it back, that means I have to leave there about 1 April. It's roughly 3,500 road miles.

    Title: Dottie's "In a Hurry" Beef Stew
    Categories: Main dish, Meats
    Yield: 4 servings

    1 lb Stew meat
    3 lg Carrots
    2 T Flour
    1 T Cooking oil
    1/2 t Salt
    1/3 t Pepper
    1/8 t Garlic powder
    1 c Beef broth (boulion)
    6 lg Potatoes, peeled
    1 sm Can milk (evaporated)
    2 T Butter

    In a large heavy skillet heat oil. Mix flour, salt, pepper, garlic
    powder together and coat each piece of stew meat. Reserve the left
    over flour. Brown meat in skillet then lower heat and simmer with the
    cup of beef broth until the meat is tender. Appox. 30 minutes. Add
    the carrots (chopped in 1 inch pieces) and simmer until carrots are
    tender. Add reserve flour mixture to thicken gravy. You can add more
    hot water if too thick.

    Boil the potatoes until tender, drain and mash with the canned milk
    and butter. Salt and pepper to taste. From Dottie Theriault's Private

    Serve mashed potatoes with the carrot meat gravy spooned over the
    top. A delicious and quick, stick to your ribs supper. Add a tossed
    salad and you have a meal in minutes.

    I don't keep up with *any* of the jockstrap sports. I just knew you were
    an Aridzona snowbird and sometimes attended beisbol practices. Last time
    I paid any attention to baseball the only team with anything to do with Arizona was the (s)C(r)ubs - before they got all full of themselves and
    lucked into a World Series win.

    Title: Carr's Alaskan Railroad Chilli (A Long Lost Recipe)
    Categories: Beef, Vegetables, Chilies, Pasta
    Yield: 8 Servings

    2 lb Ground beef
    1 c Chopped onion
    1/2 c Chopped celery
    15 oz Can tomato sauce
    6 oz Can tomato paste
    4 c Water
    1 tb Lemon juice

    MMMMM------------------------SPICE BLEND-----------------------------
    2 tb McCormick/Schilling chilli
    - spice mix
    1 1/2 ts Ground cinnamon
    1 ts McCormick/Schilling
    - California-style garlic
    - powder
    1/2 ts Hot Schilling hot shot!
    - (black & red pepper)
    1/2 ts Ground allspice
    2 tb Sugar
    1/2 ts Salt
    2 California bay leaves

    MMMMM------------------------FOR SERVING-----------------------------
    1 lb Cooked spaghetti; drained
    15 oz Can kidney beans; rinsed,
    - drained
    Grated Cheddar cheese
    Chopped onion

    Cook ground beef, onion, and celery in Dutch oven or
    large pot over medium heat until beef is no longer pink,
    stir often, then drain.

    Combine spice blend and stir in beef mixture. add tomato
    sauce, tomato paste, water and lemon juice. bring to a
    boil, reduce heat and simmer 1 to 1 1/2 hr. stirring
    occasionally.

    Remove bay leaves with spoon. discard. Serve chilli over
    spaghetti and beans: Top with cheese and onion.
