There was a sizable fire (157000 acres as of Thursday)
between Swisher's Alaska haunts. He'd planned on shuttling
stuff between them, but the highway is intermittently
closed, and there are major delays when it's open.

I have a niece and nephew living on an acreage in that particular
Paradise Valley not far from the market garden farm. Their place is
on the banks of the Hay River about five miles outside of the town of
Hay River and quite wild and pristine but they still have
electricity and a paved road. There are bald eagles nesting in a
Best of many worlds. All they need is a symphony
orchestra.

cat: Chili, Beanz, Can-Mex, not Tex-Mex

Ground meat: Beef or moose 1.5 pounds
Canola oil 1 tablespoon
I'd say much more, and make it animal fat if possible.
Yellow onion 1 medium, diced
garlic 2 cloves minced
Chili powder 2-3 tablespoons
Dried oregano 2-3 teaspoons
Ground cumin 2 teaspoons
Ground coriander 1 teaspoon
salt To taste
Ratio of cumin to coriander should be much greater -
or omit the coriander, it's silly anyway.
Kidney beans 2 cans 540 ml each
Ain't chili.
Canned diced tomatoes 796 ml
Ain't chili. That's way too much, and to my
taste puree makes way more sense.
Bell pepper - any colour 1 chopped
Substitute a hot pepper for at least half.
And chop the bell pepper, if you like it,
really fine, or grind it.
Mushrooms 1 small can, drained or 6-8 fresh sliced.

Celery 1 rib diced
Maybe.
White vinegar 1-2 tablespoons
Just to correct seasoning, but why not Cholula or
any other reputable hot sauce instead?
Serve with rice.
Everything's better with pasta.
... Big dark red beans? That's a northern thing, Yankee chili.
I've suddenly grown fond of big dark red beans, which
I will fish out of a soup or stew and eat separately,
squishing each bean between tongue and top palate,
letting the starchy mess come out like a bug insides.
If it doesn't squish easily, don't eat.

2 c Raw, med-size shaped pasta 1/4 c Grated Parmesan cheese
2 c Cooked/canned red beans OR 1 c Plain yogurt
2 c Kidney beans 1/2 ts Chili powder r more
to taste
1 c Diced zucchini (@ 1 med) 1/2 ts Ground coriander
1 Sm green pepper, fine chop 1/2 ts Paprika
1 Med ripe tomato, chopped 1/4 ts Dried sage
1/3 c Chopped green olives
Cook the pasta al dente and rinse with cool water. Drain the pasta well
and put it in a mixing bowl. Add the remaining ingredients and mix
thoroughly. Serve at room temperature or chilled. source unknown
