    Yield: 8 Qt

    6 lb Green tomatoes, sliced
    2 lb Onions, peeled & sliced
    6 c White sugar
    1 pt White vinegar
    1 Red pepper - chopped fine
    2 tb Salt
    Pickling spice tied
    In a cheesecloth bag

    Cook slowly in large pot for 2 1/2 - 3 hours. Bottle in preserving
    jars while still hot.

    Categories: Five, Salads, Dressings, Sauces

    1/2 c Bottled buttermilk or ranch
    - dressing
    1/4 c Mayonnaise
    1 1/2 ts Dijon mustard
    1/2 ts Coarse black pepper
    ds Worcestershire

    Mix all ingredients. Keep refrigerated and tightly
    covered to use in 10 days.

    True, I hadn't thought of that. Of course, there's always going to be a human cashier hanging around because there's certain parts of the population who shouldn't use self-checkouts even though they do. Like the people who buy $300
    worth of food and insist on using the tiny checkout...

    Fun fact: the reason why ATMs use a four-digit PIN is that the inventor of the ATM tried an experiment with his wife on whether or not she could remember a six-digit PIN when he was doing final development of his ATM. She could not remember six digits but she could remember four. Et voila! the birth of the four-digit ATM PIN was born. I know that some modern ATMs will allow six to eight digit PINs now but from what I understand, those are only with certain large banks.

    Title: The Best Blueberry Muffins
    Categories: Muffins, Fruits, Breakfast
    Yield: 12 Muffins

    1/2 c (1 stick) butter; at room
    -temperature
    1 c Granulated sugar; or slight-
    -ly less depending on tart-
    -ness of blueberries
    2 lg Eggs
    1 ts Vanilla extract
    2 ts Baking powder
    1/4 ts Salt
    2 1/2 c Blueberries; mash 1/2 cup
    -with a fork
    2 c All-purpose flour
    1/2 c Milk
    1 tb Sugar mixed with
    1/4 ts Ground nutmeg

    Heat oven to 375F. Grease 12 regular muffin cups, including the area
    between each cup, or use foil baking cups.

    In a medium-size bowl, beat butter until creamy. Beat in the sugar
    until pale and fluffy. Beat in eggs, one at a time. Beat in
    vanilla, baking powder and salt.

    Mix mashed berries into batter.

    Fold in half the flour with a spatula, then half the milk. Add
    remaining flour and milk. Fold in remaining blueberries.

    Scoop batter into muffin cups. Sprinkle with nutmeg sugar.

    Bake 25 to 30 minutes, or until golden brown. Let muffins cool at
    least 30 minutes in the pan before removing.

    I resemble that :-}} I avoid the self service machines almost all the
    time. They don't like me anyhow.

    We have a debit card. We use it at least (and maybe only) once a year
    to get money for Christmas envelopes for the kids and grandkids. That
    is our only use for an ATM machine. Almost all the rest of our banking
    is via the internet.


    MMMMM----- Recipe via Meal-Master (tm) v8.05

    Title: Wild Mushroom, Prosciutto, and Gruyere Sandwiches
    Categories: Main dish, Sandwich
    Yield: 4 Servings

    2 tb Olive oil
    2 Shallots, minced
    8 oz Mixed wild mushrooms, such
    -as shiitake and portobello
    -trimmed, brushed clean,
    -and sliced
    1/2 ts Dried thyme
    1/2 ts Dried rosemary
    8 Thick slices egg bread or
    -challah
    4 tb Honey mustard
    4 oz Prosciutto or other salty
    -cured ham, sliced thin
    4 oz Sliced Gruy=8Are cheese
    8 Slices red or yellow
    -tomatoes, or mixed tomatoes
    2 c Mixed salad greens

    Heat the olive oil in a skillet and add the shallots, sauteing for 1
    minute over low heat. Increase the heat to medium and add the
    mushrooms, thyme and rosemary. Saute, stirring, for 2 minutes, until
    mushrooms are softened. Remove mixture from pan and set aside in a
    warm place.

    Brush the bread on one side with the honey mustard. Cover spread with
    a layer of prosciutto, then cheese. Place under a broiler or in a
    toaster oven and toast until cheese is melted and golden brown.

    Place toasted sandwiches on plates and divide mushroom mixture among
    servings. Top with tomatoes and salad greens and remaining slices of
    bread. Serve immediately.

    I mostly avoid those, too.... I'd much rather go inside the bank and
    either deposit or withdraw money from a teller.... on the rare occasion
    I've withdrawn money from an ATM, or checked my balance in order to
    activate the debit card, but generally I just don't use ATMs at all...
