Quoting Michael Loo to Jim Weller <=-

a nutty flavor that I like, from the caramelization of the milk
    solids.

When making brown butter I like to add milk powder to get
    browner, nuttier brown butter.

A good enough idea, for those who have milk powder.

I keep it on hand sometimes to add to liquid milk along with cream
    when making yogurt.

    Nonfat or full fat?

I have never come across anything but skim milk powder. I didn't
know there was such a thing as full fat milk powder.

Interesting place. Drew Nieporent is the executive chef behind
the concept, but guess who was the financier?

I couldn't guess and had to look it up. I'm not surprised by that
though as a lot of Hollywood celebrities, athletes and musicians
have restaurants and bars in their investment portfolio and they are
usually high quality ones. There are exceptions though: Tim Horton's
    comes to mind.

This got me thinking about such people and so now I have Jimmy
    Buffet playing in the background.

Title: Crispy Green Beans with Lemon Brown Butter
    Categories: Vegetables, Sauces
    Yield: 8 Servings

16 oz pk whole green beans or
    1lb pole beans, ends trimmed
    3 tb Unsalted butter
    1 tb Lemon juice
    1 ts Salt
    1/2 ts Pepper
    1 ts Sugar

In a medium saucepan, cook frozen green beans according to package
directions. If using fresh beans, bring 1 quart water to a boil
over high heat and stir in beans. Allow water to boil again,
reduce heat slightly and cook vigorously until beans are easily
pierced with a fork, tender, but not mushy, about 10 minutes.

Drain beans and rinse with cold water to stop cooking. At this point,
beans may be refrigerated until serving time.

In medium saucepan, melt butter over medium high heat. When butter
begins to bubble, reduce heat to low and continue cooking until
butter turns caramel colored and has brown flecks in it. Remove from
heat. Stir in lemon juice, salt and pepper to taste.

Add beans to saucepan, toss to coat evenly and heat through.
Adjust seasoning to taste, adding 1 teaspoon sugar, if desired.

Variation: Cook a 16 ounce package frozen broccoli according to
package directions, or cook 1 pound fresh broccoli florets, as
fresh green beans above, until tender, 6 to 8 minutes. Proceed as
above. Add 1/2 teaspoon grated nutmeg.
