    I used to really enjoy ruby-red grapefruit and rrg juice. Unfortunately
    I am not allowed to have any sort of grapefruit because of a medicine I
    am taking. I once asked my primary care doc what would happen if I had
    a glass of grapefruit juice. He said, it depends, maybe nothing -- or
    maybe your muscles would stop working.


    MMMMM----- Recipe via Meal-Master (tm) v8.05

    Title: Trenchers (Open Face)
    Categories: Sandwich, Snack, Seafood, Vegetable
    Yield: 4 servings

    MMMMM-----------------------TUNA TRENCHERS----------------------------
    2/3 c Mayo
    1/2 c Celery, thinly sliced
    13 oz Water packed tuna, drained
    1/2 c Shredded cheddar cheese
    2 tb Onion; finely chopped
    1 ts Dill weed (dried)
    1/4 c Green pepper, finely chopped
    Lettuce or Endive

    MMMMM----------------------GARDEN TRENCHERS---------------------------
    1 c Chopped zucchini
    1 c Mozzarella cheese, diced
    1/3 c Sour cream
    1 tb Onion finely chopped
    1 ts Dried basil crushed
    1 c Cherry tomatoes, quartered
    Lettuce

    MMMMM-----------------------BEEF TRENCHERS----------------------------
    1/2 lb Deli roast beef -
    1/2 c Chopped onion
    1/2 c Chopped green pepper
    1/2 c Chopped tomato

    MMMMM---------------------HORSERADISH SAUCE--------------------------
    3 oz Cream cheese, softened
    3 tb Milk
    2 tb Cream style horseradish (or
    To taste)
    1/2 ts Sugar
    1/4 ts Salt
    1/4 ts Black pepper
    Lettuce or Endive

    MMMMM-------------------------TRENCHERS------------------------------
    1 cn 8 oz crescent dinner rolls

    Trenchers: Heat oven to 375. Unroll dough; separate into four
    rectangles. Press or roll each to form 6 x 4 rectangle. Place on
    ungreased cookie sheet. Firmly press perforations to seal. Prick
    with fork in several places.

    Bake at 375 for 8 - 10 minutes or until golden brown.

    Tuna Salad In medium bowl, combine all salad ingredients; mix well.
    Arrange lettuce on each "trencher", spoon salad evenly over lettuce.
    Serve immediately.

    Garden Salad In medium bowl, combine all ingredients except tomatoes.
    Mix well. Then gently fold in tomatoes right before serving. Arrange
    lettuce over each "trencher" spoon salad evenly over lettuce. Serve
    immediately.

    Beef Salad Tear beef into bite sized pieces. In medium bowl, combine
    all salad ingredients; toss gently. In small bowl, combine all sauce
    ingredients, blend well. Arrange lettuce over each "trencher" spoon
    salad evenly over lettuce, top with sauce. Serve immediately

    I am fortunate in that none of my meds react adversely with grapefruit
    or its juice. If they did I'd discuss alternatives with my croaker(s).

    I'm told by WebMD and similar sites that the main reactor to grapefruit
    is blood pressure meds - reacting to the acids contained. It seems to *increase* the effectiveness of the medication for the given dosage - unpredictably.

    This is on my round tuit list.

    Title: Grapefruit & Sugar Rubbed Pork Tenderloin
    Categories: Pork, Citrus, Herbs, Chilies
    Yield: 4 Servings

    1 c Packed dark brown sugar
    1 tb Smoked sweet paprika
    1/2 ts Ground cumin
    1/2 ts Ground fennel
    1/4 ts Cayenne
    5 cl Garlic; peeled
    2 Grapefruit; zested,
    - supremed
    Salt & fresh ground pepper
    1 1/2 lb Pork tenderloin

    Set oven @ 450°F/232°C.

    Purée sugar, paprika, cumin, fennel, cayenne, garlic,
    grapefruit zest and segments, plus salt in a food
    processor until very smooth; transfer to a large bowl.
    Add pork and toss to combine; cover with plastic wrap
    and let sit 15 minutes at room temperature. Transfer
    pork to an aluminum foil-lined baking sheet fitted with
    a wire rack; cook until slightly caramelized on the
    outside, about 45 minutes. Let pork rest 10 minutes
    before slicing.

    Serves 4
