    have claimed all the briskets. Head, tail, liver,
    kidneys, tripe, feet, you have to go Mex-Mex. The

    Then there's the Vietnamese, who probably use pretty well everything although they may not serve it to outsiders.

    Yes, I'd forgotten, there is a huge Vietnamese
    presence in Texas and Louisiana.

    I saw the 9/11 light memorial from the air. Quite
    spectacular and rather moving.
    I'd like to have seen that one myself.
    if you fly over the city on 9/11 they do a revival of

    It's not always clear whether the ones that get caught or at

    Title: Chicken in Lemon Grass and Chili (Ga Xao Xa Ot)
    Categories: Poultry, Vietnamese, Chili
    Yield: 4 servings

    3 lb Chicken 4 ea Cloves garlic
    1 ea Large onion 3 tb Vegetable oil
    1 ea Salt 2 tb Minched lemon grass
    1 ts Ground chilies 4 tb Fish sauce(nuoc mam)
    1 tb Granulated sugar 1 tb Caramel sauce
    1 c Water

    Rinse chicken and dry well. Cut into small pieces. Peel garlic and
    slice
    finely. Cut onion into halves lengthwise and then cut lengthwise into
    1/2
    inch strips. Heat oil in large frying pan over medium heat. Add a pinch
    of
    salt, garlic and onion. Fry over medium heat until onion becomes
    translucent. Add lemon grass and chili. Fry 1 to 2 minutes until
    fragrant. Add chicken and cook until lightly browned. Add fish sauce,
    sugar
    and caramel sauce. Mix well. Add 1 cup water and cook 45 minutes or
    until
    chicen is tender. Stir occasionally and add more water if necessary.
    Makes
    4 servings. CARAMEL SAUCE: Mix 1/2 c sugar with 4 tablespoons of water in
    heavy saucepan. Bring to a boil over medium heat and let boil until
    mixture
    changes colour. Turn heat down to low and heat until brown. Add 1/2 cup
    water to mixture. Stir until sugar is dissolved. Remove from heat and
    store in a jar in the refrigerator. Source unknown

    Not too long ago, Marcus Samuleson did a series called "No Passport
    Required". One of his shows was set in New Orleans.
    We eagerly looked forward to it expecting to learn something new about
    Cajun or Creole cooking. Instead it was 100% focused on the Vietnamese community in New Orleans -- which I never knew existed. His show on
    Detroit was focused on the Middle Eastern community there.
    Neither show was what I expected, but both were excellent. I think
    that there were only six shows in all. Other shows were Ethiopian in Washington DC, Indo-Guyanese in Queens, Mexican in Chicago and Haitian
    in Miami.

    And yes -- most of us would quickly change some of the ingredients in
    this recipe, but it does look like it has possibilities.

    Title: Spinach & Beef Pita Sandwiches !
    Categories: Meat, Sandwich
    Yield: 4 servings

    1 lb Lean ground beef
    10 oz Frozen chopped spinach,
    -thawed
    14 1/2 oz Can diced tomatoes, drained
    1 bn Green onions, chopped
    2 1/4 oz Can sliced ripe olives,
    -drained
    2 ts Lawrey's Lemon Pepper
    -Seasoning
    1 c Plain non-fat yogurt or
    -dairy sour cream
    1/2 c Kraft Light Mayonnaise or
    -Miracle Whip Salad
    -Dressing
    6 (6-inch) pita breads,
    -warmed
    6 lg Red leaf lettuce leaves
    4 oz Crumbled feta cheese

    In large skillet, brown beef until crumbly; drain fat. Place
    spinach in strainer; press with back of spoon to remove as
    much as possible. Ad spinach, green onion, olives and 1
    teaspoon Lemon Pepper Seasoning to beef; cook 2 minutes.
    Stir in tomato. In small bowl, combine yogurt, mayonnaise
    and remaining 1 teaspoon Lemon Pepper
    Seasoning. Split pita breads open 1/3 of the way around;
    line insides with a lettuce leaf. Stir cheese into beef
    mixture and divide amoung pita pockets. Top with dollop
    of yogurt sauce. Serve immediately.

    Prep Time: 10 minutes Cooking Time: 12 minutes Makes: 6 Servings
