    The new franchisee is pretty savvy. They own 384 restaurants in
    Canada and the UK. The British group bought out an Ontario company
    which had 120 KFC stores there and hired some top Canadian McDonald's
    people to run the operation for them here in this country. My
    dealings were with an ex-McDonald's chap who was the western Canada
    real estate and business development guy and recently I met two of
    the heavy hitters from the UK, Shehzad and Bernie.

    I have found over the decades that the newest immigrants off the
    boat are the hardest workers no matter where they're from. The
    second generation is better educated and more fluent in English or
    French than their parents and get higher paying jobs and the third
    generation are just like the rest of us entitled and lazy slobs.

    We have lots of Caribbean, African, Filipino and recently Australian
    immigrants here and almost all of them have adapted and survived.

    operating rules and regs are, as you note, under Uncle Charlie (the FCC)

    Even if they pile a wad of buffalo bagels in her path there are several companies in the US offering satellite internet. My brother has that at
    his house because AT&T doesn't have DSL available at his address and he
    refuses to pay $cumca$t U$500 to bring a "drop" to his house from across
    the street.

    The downside is that, like the satellite TV, the satellite internet is
    subject to "rain out" interruptions. That is, excess moisture in the air attenuating the signal to the point of unusability. The internet signal requires more bandwidth than the TeeVee signal - so it rains out more
    easily. When the DishNet TV rains out it's a real frog strangler. Bv)=

    Title: Snails w/Frogs' Legs (Escargots Aux Grenouilles)
    Categories: Game, Exotics, Wine, Dairy
    Yield: 4 Servings

    48 Burgundy snails
    Court bouillon
    4 Shallots
    Chives
    3/4 c White Macon wine
    24 lg Frog's legs
    1/2 c Milk
    Flour
    4 tb Butter
    Salt & pepper
    Chopped parsley; garnish

    Cook the snails in advance in a court bouillon, then
    remove them from their shells. [There's a description
    of court bouillon in "Joy of Cooking." Basically, a
    court bouillon is an aromatic liquid or stock, often
    containing wine, vinegar or lemon juice, used mainly
    for cooking fish and shellfish, but also sometimes
    white offal (variety meats) and some white meats.]

    Chop them, together with the peeled shallots and a
    small bunch of well-washed chives. Place these
    ingredients in a saucepan with the wine, cover and
    simmer for 1 hour.

    Meanwhile, soak the frogs' legs in the milk for 1
    hour. Drain them, then roll in flour and saute in
    the butter in a frying pan over a brisk heat for 10
    minutes. Add the snails, together with their cooking
    juices, and season with salt & pepper. Turn up the
    heat and cook for a further 5 minutes.

    Sprinkle with chopped parsley and serve.

    Looking at the ingredients, I figure that this'll
    feed 4 as a main course or 8 as an appetizer. - UDD

    Comcast has an absolutely horrible reputation. It appears that your
    FCC does not have as much clout as the CRTC or they would have
    either fined them heavily enough to make them smarten up or even
    shut them down years ago.

    Title: Yams Mousseline
    Categories: Vegetables, Dairy, Potatoes
    Yield: 6 Servings

    3 md Sweet potatoes, cooked,
    Peeled, and mashed
    Salt and white pepper
    2 tb Butter
    2 tb Fresh orange zest
    1 tb Freshly squeezed orange
    Juice
    1/4 c Heavy cream
    1 ts Freshly grated nutmeg

    1 tablespoon minced fresh rosemary or thyme also works well in
    here.

    Preheat the oven to 350 degrees. Beat all of the ingredients
    together until light and fluffy. Place in a greased baking dish
    and bake for 10 minutes or until piping hot and slightly puffy.
    Serve hot.

    The Funny Candy Company could have as much clout if they'd exercise it.
    But, they're also political at the top with appointed executives/policy
    makers whose response to requests from companies like Comcast typically
    is "Sure, which cheek?"

    It's too much to hope that $cumca$t will be broken up by the current
    gummint or be forced to (gasp) put customers before bottom line.

    I have Comcast internet because it's what's available. Satellite internet
    gets "rained out" too much and DSL is not currently available to me. But,
    there is hope .... AT&T crews were pulling fibre next to my property. As
    soon as DSL becomes available Comcast can kiss the brown spot.

    I have everything for this except the 'coon. If I can nail that rascal
    that's trying to ravage my refuse bin I'll convert the recipe tag from "Archives" to "Kitchen". Bv)=

    Title: Roasted Raccoon & Yams
    Categories: Game, Chilies, Vegetables, Citrus, Herbs
    Yield: 4 Servings

    1 Fat raccoon; dressed, scent
    - glands and fat removed
    2 Red chile pods; whole
    1 ts Salt
    1/4 ts Pepper
    1/8 ts Ground sage
    2 tb Lemon juice
    4 lg Yams; peeled, quartered
    1/4 c Brown sugar
    1/2 ts Cinnamon
    1/8 ts Ground ginger

    Place the raccoon in a large pot with the peppers. Cover
    with water, bring to a boil. Reduce heat and simmer for 1
    hour.

    Remove raccoon from the pot and place on a rack in a
    roasting pan.

    Pour the lemon juice on the raccoon. Sprinkle on the salt,
    pepper and sage.

    Place the yams in the pan around the raccoon. Add 1 cup
    of water.

    Mix together the brown sugar, cinnamon and ginger. Sprinkle
    on the yams.

    Cover and bake at 325°F/163°C for 2 hours or until the
    meat is crisp and brown.

    Transfer to a serving platter.

    Serve and Enjoy!
