    Doc's didn't go anywhere I check. And this morning's packet from there
    was all posts from Nancy and MLoo - posted on Doc's directly. I suspect
    Ed may get his stuff from Marc Lewis' SESTAR. And that may be where the constipation occurs. The 20 posts I dropped in the pot there at 03:35
    central have not appeared anywhere (yet) and normally they would be
    tossed and filed within 30 to 45 minutes. I've e-mailed Marc about my suspicions.

    Not clear -- but if you think that there is a problem, feel free to
    talk to him via email and/or area 2 on his BBS. I see nothing wrong
    -- just that Cooking seems to be going through a few days of light
    mail.

    See above. I've also left a note on area 2 @ Doc's. This ain't just a
    matter of light mail in Cooking.

    Shifting gears - I have noticed that the recipe sources that I use
    seem to have abandoned chicken breast as their default chicken meat and gone over to thighs/legs. In the past 60 days all of the recipes I have read for chicken have specified thighs/legs with nary a mention of
    breasts unless referencing parting out a whole bird.

    Makes no difference -- folks would substitute whichever preference they have anyhow.

    Well, yes, we always do. I just thought it neat that they're coming
    around to the taste side of things rather than the "automatic" entry
    practice. Now, if I can just get them to call out a "rib" of celery or
    a "stick" when that is the meaning instead of "stalk" which is actually
    a bunch or "head" for celery - and a lot of darned crunchy greenish
    stuff.

    They're all still in love with Kosher salt as their default salt
    unless they are specifying "sea salt". Seldom see just plain ol' "salt" mentioned. If there is no quantity measure on the call for salt the "Kosher" part somehow gets lost in the shuffle when I pound it into my Meal Master. BV/=

    The difference between regular salt and the other two is that regular
    salt has iodine added. Kosher is also a larger granule, which has some effect on things like rubs but little to none used when cooking in a liquid recipe.

    Sea Salt has naturally occurring iodine. As does some Kosher salt - if
    made from evaporating sea water as the "original" Kosher salt was. I do
    know that most of the Kosher salt sold in USA is actually large crystal
    (plain) salt.

    I buy both iodised and non-iodised table salt. Not all "regular" salt
    has iodine in it. I'm not in the least concerned about missing the
    0.002 to 0.004% iodine in my table salt. There is enough iodised salt
    in the processed food I ingest regularly that my worries about goiter
    and other thyroid problems from its lack are nil.

    If I am making a batch of my Yaaahhh Hoooaaa Aahhh Hot Sauce I make sure
    the salt is non-iodised as the potassium iodide/iodate turn the garlic
    cloves a particularly vile shade of pale blue-violet much like a bruise.

    MMMMM----- Recipe via Meal-Master (tm) v8.06

    Title: Easy Hot Sauce
    Categories: Five, Sauces, Chilies
    Yield: 1 /2 cup

    20 lg Fresh chilies; roasted,
    - stemmed & seeded *
    2 cl Garlic; rough chopped
    1/2 c Vinegar
    Salt

    * Use Anaheim, Jalapeno, Serrano, Tabasco or Cayenne
    depending on your desire for heat.

    Broil chilies for about 5 minutes or until the skin blisters
    and blackens. Transfer to a paper bag and let stand for about
    10 minutes. Peel when cool, stem, seed and rough chop.

    Place the chilies and garlic in a blender or food processor.
    With the machine running, slowly add the vinegar until the
    mixture is well blended.

    Add salt to taste.

    Keep covered and refrigerated until use.

    Yield: 1/2 cup

    Marc, I cannot speak to that -- but your messages did not go up to Marc
    but went up to Janis.

    Title: ZESTY STUFFED POTATO
    Categories: Vegetables
    Yield: 1 Serving

    1/4 c Lean ground beef or turkey
    1/4 c Frozen chopped broccoli
    2 tb Chopped onion
    1 Russet potato, baked
    2 tb Low-fat milk
    1/4 t Dried basil
    1/4 t Celery salt
    pn Nutmeg
    1/2 c Shredded Jarlsberg Lite or
    -low-fat Swiss cheese (2 oz)

    Crumble beef into a 4-cup glass measure. Sprinkle broccoli and onions
    on top. Cover with vented plastic wrap and microwave on high 2-3
    minutes, or until beef is not pink. Break up beef using a fork.

    Slice a V-wedge lengthwise out of top of potato, using about a third
    of potato. Scrape potato from wedge and inside of potato into meat
    mixture, leaving a 1/4" thick shell. Set wedge of potato skin and
    potato shell aside.

    Add milk, basil, celery salt, and nutmeg to potato; mash using a
    fork. Stir in cheese and stuff mixture into potato shell. Top with
    wedge of potato skin. Cover with wax paper and microwave on high 2-2

    Annnnnnndddd it turns out there was a combination of problems - both at
    Doc's and at SESTAR. I may not know the exact net architecture and flow
    charts. But I *DO* know when there is a problem

    I upgraded my network to Windows 10 recently. Wanted to keep this box
    on W7 but MS removed the homegroup making networking my weekly backup inoperative. Was forced to update the bbs machine to W10, but to my
    surprise the BBS came right up with no errors. BUT W10 notified me with
    a popup an update was needed. That popup interrupted the mail tosser.

    All should be well.. for now anyway.. :)

    turns out that was a local problem here... we had a power outage
    yesterday... when i brought the system back up, i forgot to cd to the
    proper directory for the mailer to run from... as a result, it couldn't
    find the outbound pkt files to send... made a real mess of things when
    the flo files that list the pkts were deleted... had to do some fancy
    command line stuffs to figure out which of the thousands of pkts where
    destined to which system and to then recreate the flo files... got that
    all finished, though... was quite happy to not have to do all that by
    hand... i'd probably be still working on it tomorrow and that would have
    been even more complicated by the new mail arriving and being processed
    at the same time...

    Title: Globe & Mail's Just Right Burger
    Categories: Five, Beef
    Yield: 4 Servings

    375 g (12 oz) chuck; in 1" pcs
    375 g (12 oz) sirloin; in 1" pcs
    1 ts Kosher salt
    1/2 ts Fresh ground pepper

    This recipe requires you to grind the meat yourself.

    Place meat in a food processor and pulse about 10 times or
    until meat looks coarsely ground. Season with salt and
    pepper. Preheat barbecue to high. Form into 4 (1"thick)
    patties and grill for 5 to 7 minutes per side or until
    desired degree of doneness.

    Serves 4.

    For the All Canadian Version, serve with sliced red onions,
    sliced tomatoes, Dijon mustard, pickles and cole slaw.

    Onion rings and sautéed mushrooms are my favourite sides.

    As you probably saw in my reply to Dale's reply I contacted both Ed and
    MarK and the problems got fixed

    Title: Docpepr's New World Spamanero Salad
    Categories: Pork, Chilies, Fruits, Salads
    Yield: 1 Servings

    12 oz Tin Spam
    2 lg Hard-boiled eggs
    1/4 sm Onion
    2 Seeded, stemmed habaneros
    1/4 c Crushed pineapple
    Salad dressing (NOT mayo)
    +=OR=+
    Aioli; Greek-style garlic/
    - egg /olive oil mayonnaise

    Chop Spam (after pouring off the slime), onions, eggs
    and habaneros in a blender, food processor, Spam, -uh
    I mean- Meat grinder. I recommend fine/puree or when
    Spam is unrecognizeable. Mix in the pineapple (can use
    small chunks for crunchiness, or sweet pickle relish
    for those who don't care for pineapple). Add Salad
    Dressing until a smooth consistency is reached (aioli
    can be used for those who like a hint of garlic)

    Eat as dip, or as a center piece in a bed of lettuce or
    perhaps serve with a Tuna Salad version and see which
    one receives the greater number of ..umm.. remarks.

    Serves 6-8 (or two Texans*)
