    Title: Tortilla Stack

    Yield: 1 servings

    1 1/2 lb Lean ground beef
    8 x Corn tortilla, cut into 6
    -wedges
    1 cn Cheddar cheese soup,
    -undilut
    1 pk Taco seasoning mix, dry
    3 md Tomatoes, chopped
    -----------------GARNISH:--
    1/4 c Sour cream
    2 c Lettuce, shredded
    1/4 c Green onions, chopped
    1 Red bell pepper, chopped
    1 Avacado, peeled, chopped

    Crumble one-fourth of ground beef into bottom of slow
    cooker. Top with one-fourth of tortilla wedges. In
    small bowl, combine soup and taco mix. Spread
    one-fourth of soup mixture over tortillas in pot.
    Sprinkle with one-fourth of tomatoes. Repeat layering
    until all ingredients are in pot. Cover and cook on
    LOW 4-5 hours. Spoon onto indiviual plates. Top each
    serving with sour cream, shredded lettuce, green
    onions, bell pepper and avocado. 1 serving contains:
    Cal 372; Prot 21g, Carb 25g, Fat 23g, Chol 67mg,

    I've seen them there a few times. Haven't seen any in our yard in this
    house but know they're in the neighborhood--saw one on South Main at the
    head of W. Holding a couple of years ago.

    Looks good, and yes, flour tortillas are often subbed around here for
    the corn variety. They get a bit soggier but doesn't seem to make much
    of a difference overall.

    Not sure how this might differ from other sorts of Asian dumplings.

    Title: Mandoo (Korean Dumplings)
    Categories: Snakaptz
    Yield: 48 servings

    MMMMM-------------------------DUMPLINGS------------------------------
    3 c Water
    1 1/2 c Fresh bean sprouts
    5 1/4 oz Extra firm tofu
    1 lb Lean ground beef
    3 Green onions; minced
    2 Garlic cloves; minced
    2 tb Soy sauce
    1 tb Cornstarch
    1/4 ts Pepper
    10 oz Pkg won ton wrappers
    1 Egg; slightly beaten
    Vegetable oil
    Lettuce leaves; optional

    MMMMM--------------------MANDOO DIPPING SAUCE-------------------------
    2 tb Kochoochang (Korean hot,
    -spicy fermented bean sauce
    -or hot bean paste
    2 tb Honey
    2 tb Soy sauce
    2 ts Toasted sesame seeds
    2 ts Rice vinegar
    -or white distilled vinegar

    TO PREPARE DUMPLINGS
    In a saucepan, bring the water to boiling. Add bean sprouts; cook 3
    minutes. Drain and rinse in cold water; drain again. ry drained
    sprouts with paper towels, chop and set aside.
    Place tofu in a double layer of 100% cotton cheesecloth; squeeze
    until dry. Place tofu in a large bowl and mash with a fork. Add
    chopped sprouts, beef, green onions, garlic, soy sauce, cornstarch
    and pepper; mix well.
    Spoon about 1 tablespoon of the filling in the center of each
    wrapper. Moisten edges of wrappers with beaten egg; fold in half,
    pressing to seal. If desired, fold small pleats along one edge. Place
    pleated side up, on a lightly floured baking sheet; cover with a
    slightly damp cloth until ready to cook or freeze. (To freeze,
    arrange dumplings in a single layer on baking sheets; freeze until
    firm. Transfer to a storage container; seal, label and freeze up to 3
    monthes. Thaw in the refrigerator overnight before using).

    TO PREPARE MANDOO WON TONS
    In a 3 quart heavy saucepan or deep fat fryer, heat 3 inches of oil to
    365 degrees F. Carefully fry dumplings, 5 or 6 at a time in hot oil
    for 1-1/2 to 2 minutes or until golden brown; turning once. With a
    slotted spoon, carefully remove won tons. Drain on paper towels. Keep
    wark in a 300 degree F oven while frying remaining won tons. If
    desired, serve on lettuce with Mandoo Dipping Sauce.

    TO PREPARE MANDOO POT STICKERS
    In a 10 inch skillet, heat 2 tablespoons oil over medium high heat.
    Arrange about 12 dumplings in the skillet, pleated side up. Cook,
    uncovered, 1 to 2 minutes, or until bottoms are lightly brown.
    Reduce heat to low. Remove pan from heat; add 1/4 cup water all at
    once near edge of skillet. Return to heat. Cover and cook 10 minutes.
    Increase heat to medium high. Uncover; cook 3 to 5 minutes or until
    water has evaporated. Add 2 teaspoons cooking oil to skillet; tilt to
    coat bottom. Cook, uncovered about 1 minute. If desired, serve on
    lettuce leaves with Mandoo Dipping Sauce.

    TO PREPARE MANDOO DIPPING SAUCE
    In a small bowl, combine Kochoochang, honey, soy sauce, sesame seeds
    and rice vinegar. Makes about 1 cup.

    Around here it's urban moose. Like yours they're mostly females and newborns, but there are some pretty impressive bulls running around. They've figured out
    that being in town reduces their chances of running into a major predator, bear/wolf, dogs are not a factor, so the only danger is 4-wheeled and they're pretty traffic aware. Cows with calfs can be pretty dangerous, already had one
    guy get slightly tenderized this year (a week or two in the hospital), and moose have killed people in Anchorage in the past.

    I've seen a few videos of moose ambling down city streets, almost
    dareing anything to mess with them. Given their size, I would amagine a highway collision would do extensive damage to most cars. Around here,
    the deer are mostly out in the wee hours of the night/morning -- but
    giving that we seem to live on Alaska time zone, we can see them
    moderately often. When they do have a run-in with a car, the damage can
    be simply a moderate dent up to a total. Either way, it can result in a
    panic attack by the car passengers.

    Title: Teriyaki Meatballs (MW)

    Yield: 4 Dozen

    MMMMM-----------------------TERIYAKI SAUCE----------------------------
    1/3 c Soy sauce
    2 tb Sugar
    2 tb Dry sherry
    3/4 ts Grated fresh ginger OR
    1/4 ts Ground ginger
    1/4 c Finely minced green onion
    2 Cloves garlic, minced
    1/4 ts Pepper

    MMMMM-------------------------MEATBALLS------------------------------
    1 lb Lean ground beef
    1/4 c Fine dry bread crumbs
    1/3 c Finely chopped green onions
    1 Egg

    Prepare teriyaki sauce: In a small bowl combine soy sauce, sugar,
    sherry, ginger, green onions, garlic and pepper.

    Meatballs: In a bowl, combine beef, bread crumbs, onions, egg, and 3
    T of the teriyaki sauce. Shape into balls about 1 inch in diameter.
    Arrange them in a single layer on a rimmed baking sheet. (At this
    point you may cover and refrigerate for up to 8 hours.)

    About 10 minutes before serving, pour remaining teriyaki sauce over
    meatballs and roll to coat evenly.

    Lift about 12 meatballs at a time from marinade and arrange in a
    circle on a flat 10" plate. Microwave, uncovered, on High for 3-3
    1/2 minutes (rotating plate 1/4 turn after 1 1/2 minutes) or until
    meat is done to your liking when slashed. Repeat with remaining
    meatballs.

    John Burroughs said that if you shot a wood chuck, 7 would come to its
    funeral. Seems to be about the same with deer in an area there are no
    natural preadators.

    Males would have a rack starting in late summer, into the fall. Not sure
    just when they do drop it but it appears the females and young are

    I wouldn't begin to hazard a guess; it's well out of my area of
    expertise.

    Some fancy made uup word for snack type food from what I could
    interpret. OTOH, mandoo is straight forward Korean dumplings. The ones
    I've had have been very good--have had from Korean friends and parents
    of our daughter's friends.

    As some of you know, we have frequent sightings of deer in our front and
    back yards. We very recently saw a pair of fawns, still spotted, just
    the other side of our fence in that wooded area. Never saw a mother
    deer though. And then yesterday, we spotted three bucks walking and
    grazing together -- each with a moderately full rack, three or four
    points per side. Both of those sightings are fairly rare. Usually it
    is a yearling sized deer and/or a more developed doe chomping on the
    grass and crabapples in our front lawn.

    Our neighbor is thinking of putting up a fence around her property. I
    think she hopes it will keep the deer from eating her plantings. I told
    them that we often see deer inside our fence. They hardly have to jump
    to get over.
